Vibrant, fresh & light British vermouth

Our vermouths are carefully handmade in small batches with beautiful English wine, key botanicals, fresh herbs and fruit; creating a delicious wine based British aperitif.

Each bottle is filled, sealed, labelled and boxed by hand at our small independent London distillery. It's naturally lower in sugar and a lower ABV than traditional styles, too.

"Champagne + Oysters" v4



This is an extra special limited release as it marks the next step in the evolution of Vault.

“Champagne and Oysters” Vermouth is a series of collaborations between Dan Joines and Max Chater and v4 is our first product launch as a fully fledged team.

Ingredients - Renegade's Riesling. Oyster Shell. Pine. Green Coffee. Rhubarb Root. Cowslip. Nettle. Dandelion. Wormwood. Sugar Kelp. Rock Samphire. Juniper Branches. Sweet Cicely. Amalfi Lemons. Amalfi Lemon Leaf.

Profile - On the nose, a bright crisp morning walk along the Devonshire coast. On the palate, bracing clean acidity meets fresh oyster minerality, with a green, gentle and long bitter finish.


A note on the label - Designed by Max using print generated artwork by the multi-talented Felix Cohen (bar owner - Daisy, Margate) - it shows the tidal data of Exmouth coast, where we sourced the oysters for this Vermouth.

Vault x Mirabeau Rosé

Introducing our latest Rosé vermouth; born out of a shared love for the aperitif culture and our passion to re-use and up-cycle.


We've used a beautiful Mirabeau Rosé originally destined for numerous events that were cancelled due to the pandemic.


The botanicals have been inspired by the South of France where the grapes were grown. The result is a perfect marriage of fresh fruit notes reminiscent of apricot and fig, with a long gentle floral bitterness hinting thyme, lavender and bay.


Botanicals: "Herbes de Provence" (Bay, Fennel Seed, Lavender, Rosemary, Thyme and Tarragon), Wormwood, Pink Pepper, Lemon Leaf, Fig, Rose Petal, Rose Bud, Cassia, Hibiscus, Grapefruit and Lemon Peel.

Vault x Mirabeau Rose
Vault Vermouth Rosso

Vault Rosso

Our signature vibrant Rosso is classically bittersweet, yet light, fresh and complex.


Made with eleven key botanicals 

(including wormwood, rosemary, orange and tonka bean), it pairs brilliantly with gentle mixers like tonic and soda, served tall.

Key notes: summer fruits, rosemary, vanilla and citrus.

Vault Bianco

Our bright Bianco is herbaceous, floral and gently honeyed.


Made with seven key botanicals (including lemon verbena, thyme and chamomile), it's perfect straight over ice, or served tall with soda or tonic and a slice of lemon.

Key notes: lemon, chamomile, honey and thyme.
